Baked Sweet Potato
Preheat oven to 350°F. Line a baking sheet with parchment paper or aluminum foil.
Poke sweet potatoes with fork on both sides of the potato, about 3-4 times on each side. Lather the potatoes generously with olive oil, then cover with coarsely ground salt and fresh ground pepper.
Cook sweet potatoes for about 40-60 minutes. Cook them until they “burst” or “hiss”, the sweet syrup will ooze out.
Serve with a little butter, or whatever toppings you’d like. Simple yet delicious.
