Beef Enchilada Casserole

Preheat your oven to 350°F.

Start by making my enchilada sauce.

Chop up your onions and peppers (if you’re using the peppers.). Chop up the green onions too, if you’re using them.

Heat a large pan to medium heat, add olive oil and cook the peppers and onions till the peppers start to get soft. Go ahead and all the beef, when peppers are soft. If you’re not using the peppers, add the beef when the onions get translucent.

When beef is browned, go ahead and season the beef. Cook seasoning into the beef for a 2-5 minutes. Remove pan from heat, and set aside and mix in the green onions (if using them).

Coat an 11x9 casserole dish in a thin layer of enchilada sauce. Place 2-4 Tortillas (it depends on the size of the tortillas) on top of the sauce, use 1/3 of the beef and spread over the tortillas evenly, followed by 1/2 cup enchilada sauce and topped with 1 cup of the shredded cheese. Place two more tortillas on top of the cheese, repeat layers.. beef, sauce, cheese. Place the final tortillas on top, last of the beef, more enchilada sauce and topped with 1 cup cheese (or more if you’re feeling cheesy).

Cover with aluminum foil and bake for 30 minutes. Remove the foil and continue to bake for 10 more minutes or until the cheese has reached the cooked level you like.

Ingredients

  • Enchilada sauce

  • 1 small yellow onion

  • 1 red or yellow bell pepper (optional)

  • Green onions, chopped (optional)

  • 2 lbs ground beef

  • 1/4 cup taco seasoning

  • Flour tortilla (the amount depends on the size tortillas you use)

  • 3 cups (minimum) shredded cheddar cheese
