Completely thaw the spinach, wrap in a clean dish towel and wring out all the excess water before chopping.

Preheat oven to 350°F.

In a large bowl mix ingredients together. Ground chicken, spinach, basil, garlic, onion, egg, breadcrumbs, cheese, salt & pepper, mix until just combined. I mixed everything but the meat and the egg together first, blended that together and broke apart the spinach, then added meat and the egg.

Form the mixture into golf ball sized balls & place them on a baking tray covered in parchment paper or spray with cooking spray. Bake for 25-30 minutes.

You can use the meatballs as is, use jar sauce or homemade. You may mix heated sauce with the meatballs or place the sauce on top of the spaghetti and just top with meatballs. I just placed the meatballs in some sauce, placed on the table and everyone can scoop the amount of sauce and meatballs they’d like.

  • 1 lb ground chicken

  • 10oz box frozen spinach, thawed, drained and chopped

  • 2 tablespoons basil, chopped

  • 2 large garlic cloves, chopped

  • 1/2 medium onion, finely chopped

  • 1 egg, beaten

  • 1/4 cup breadcrumbs

  • 1/4 cup shredded Parmesan cheese

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper
