Cut the pork into bite-sized pieces. Heat oil in a large skillet, add pork pieces to skillet till meat is browned.

Add garlic and saute for a minute. Add soy sauce, vinegar, bay leaf, pepper and broth. Mix ingredients together with a wooden spatula.

Bring to a boil, reduce heat to low and simmer covered for 45 minutes, or until pork is tender. Watch it carefully, you do not want the meat to dry out. Add 1/2 cup water/broth at a time if needed, until the pork meat is tender and you’ve made the desired amount of sauce.

Stir in some honey or brown sugar at the end, stir in. Serve over white rice. Or turn it into a bowl. Add white rice, top with the pork, blanched spinach, poached egg and topped with scallion.

Ingredients

  • 2 lbs pork shoulder or pork belly, cut into bite size pieces

  • 2 tablespoons vegetable oil

  • 6 cloves of garlic, chopped

  • 3/4 cup soy sauce

  • 3/4 cup white vinegar

  • 2 bay leaves

  • 1 teaspoon fresh black pepper

  • 2 cups vegetable/beef broth, or water if you want (You’ll likely need more as you add to cook the beef)

  • 2 tablespoons honey or brown sugar

  • Poached Egg or a soft boiled egg

  • A bunch of spinach (a bag or two). Or bok choy, leeks… a green vegetable of sorts, but spinach is generally used

  • Green onion, chopped

  • White rice
