Loaded Roasted Cauliflower
Remove the leaves from the cauliflower, and cut into florets. Fry up some bacon and reserve the bacon fat, about 1/4 cup. Set bacon on a plate with a paper towel. When bacon is cooled, chop bacon.
Heat oven to 425°F, line a baking sheet with parchment paper and set aside.
In a large bowl, combine the cauliflower, bacon grease, garlic powder and black pepper, toss to combine. Spread cauliflower on the prepared baking sheet and then bake 20-22 minutes until cauliflower is tender and golden brown. Flipping once halfway through the cooking process.
Remove cauliflower from oven, top cauliflower with cheddar cheese and bake an additional 2-3 minutes until cheese is melted.
Remove from oven, top the cauliflower with the crumbled bacon and green onions. Drizzle with ranch dressing, serve immediately.

6 slices of bacon
2 heads of cauliflower, cut into florets
1 teaspoon garlic powder
1/4 teaspoon fresh cracked pepper
1/3 cup shredded cheddar cheese
4 green onions, sliced thinly
1/3 cup ranch dressing, to drizzle, can be optional
