Mushroom Spinach White Pizza

For this Pizza recipe I used homemade pizza dough that I make at work. I cannot share that recipe, because it is from my family business. You may use any dough of your choice, your own dough made from scratch or a store bought RAW dough.

Preheat oven to 450°F.

In a medium sized skillet, add the sliced mushrooms and cook on high heat for a few minutes, till the water from the mushrooms evaporates. Once the water from the mushrooms evaporates and the mushrooms turn a little brown, add butter and dried thyme. Stir frequently and cook for an additional minute or two. Take the mushrooms off the skillet and set aside.

In the same skillet add oil and spinach leaves. Sprinkle garlic powder and a pinch of salt to the spinach and cook until all the spinach leaves are wilted, about 3-5 minutes. Remove from heat and set aside.

In a bowl mix together 1 cup of ricotta cheese, 1 teaspoon salt, 1 teaspoon Italian seasoning, and 1 teaspoon dried basil.

Lightly flour your working surface and start stretching and flattening the dough. Place dough into a pizza pan or a square baking pan.

Spread the ricotta mixture onto the dough, evenly and thinly.

Add the mushrooms and spinach, add 2/3 cup of shredded mozzarella cheese on top of the pizza toppings.

Sprinkle red pepper flakes on top of the pizza, if you like your pizza a little spicy. Sprinkle with black pepper on top.

Place pizza in the oven and cook 11-15 minutes. Remove pizza, cut serve and enjoy.

Ingredients

  • 1.5 - 2 lbs of pizza dough. You can make your own or buy RAW pizza dough and roll it out

  • 2 cups ricotta cheese, plus a few tablespoons if topping with extra ricotta

  • 1 teaspoon salt

  • 1/2 teaspoon Italian seasoning

  • 1/2 teaspoon dried basil

  • 1 package button mushrooms, sliced

  • 1 teaspoon butter

  • 1/4 teaspoon dried thyme

  • 2-3 cups baby spinach leaves

  • 1 teaspoon oil

  • 1/2 teaspoon garlic powder

  • 2/3 cups shredded mozzarella

  • freshly ground black pepper

  • 1/2 teaspoon red pepper flakes, optional

**My significant other had made cured sausage from scratch so I incorporated that on half of the pizza.
