Parmesan Garlic Baked Chicken & “Quick Potatoes”

Ingredients

  • 6 boneless skinless chicken thighs or 6 halved boneless skinless chicken breasts

  • 4 cloves or garlic, minced

  • 1/4 cup olive oil

  • 1 cup Italian seasoned breadcrumbs

  • 1 tablespoon Italian seasoning

  • 2/3 cups grated Parmesan cheese

  • 2 teaspoons dried basil leaves

  • 1 teaspoon fresh ground black pepper

Preheat oven to 350°F

I recommend taking a baking tray, line it with aluminum foil and place a baking rack on top. If you do not have a baking tray like that grease a 9x13 baking dish.

In a bowl blend the olive oil and garlic. In a separate bowl mix the breadcrumbs, Parmesan cheese, basil, Italian seasoning and pepper.

Dip each chicken in the oil, then dip in the breadcrumb mixture and press it down on each side, then place on/in your baking unit. Sprinkle any leftover breadcrumb mixture on top of the chicken.

Bake chicken in the oven for 30 minutes until the chicken is cooked through and reaches 165°F.

Serve with any side of your choice, potato or vegetable.

“Quick Potatoes”

I served this with golden potatoes. I did what I like to call “quick potatoes”. I bought a bag to whole steamed potatoes, allow them to cool and slice them in half.

Heat skillet over medium-high, add olive oil, season the potatoes with salt and pepper. Allow potatoes to crisp up, toss in some fresh garlic and allow the garlic to get fragrant. Add fresh chopped parsley and oregano, toss. Serve hot.
