Sausage Breakfast Casserole
Start by taking a 8x8 casserole dish, spray generously with cooking spray. Heat oven to 350°F.
Cook your breakfast sausage in crumbles in a pan. I use a tube of raw ground sausage and just break off into chunks with my hands and start crumbling it right into the pan. Cook sausage and use a spatula to break up larger chunks to evenly cook. When sausage is no longer pink and is a light brown, remove from heat and allow to cool.
In the casserole dish, add the eggs, sprinkle the onion, garlic, salt & pepper right on top, add in the cream and whisk. When everything is nice and evenly whipped, add in the cheese and mix, add in 3/4 of the cooled sausage and mix. Top with the frozen tater tots and place in oven, cook for 40-45 minutes.
Remove dish from oven, top with the remainder of the cooked sausage and top with more cheese. Continue to bake for 5-10 minutes until the cheese is melted to how you like, cool, cut and serve. Enjoy!
Ingredients
6 large eggs
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon sea salt
1 teaspoon ground black pepper
1/4 cup heavy cream or milk
1 roll of uncooked sausage (I use jimmy dean spicy sausage, I find the original sausage to be a bit salty sometimes, but you use whichever you prefer.)
1 cup cheddar cheese, plus extra for topping the dish. (You can use any type of harder cheese you like.)
1 lb frozen tater tots
