Sheet Pan Chicken Thighs With Veggies

Ingredients

  • 6 Chicken thighs, skin on bone in

  • 1 tablespoon olive oil

  • 1 head of broccoli, 1 medium squash and one red pepper… OR

  • 1 head of broccoli, string beans and 1 onion

  • Salt and pepper

    Marinade

  • 1/4 cup honey

  • 2 tablespoons olive oil

  • 2 teaspoons chili sauce

  • 1 tablespoon tamari

  • 2 cloves garlic, minced

  • 1/2 teaspoon salt

In a bowl whisk marinade ingredients together. Season chicken with salt and pepper. Place chicken in a large ziplock bag, pour marinade over chicken and place in refrigerator for a minimum 30 minutes.

Spray a large baking sheet pan with olive oil or cooking spray.

Preheat oven to 400°F

Cut vegetables and place them on a sheet pan. Drizzle with olive oil and season with salt and pepper.

Remove chicken from marinade and place in the sheet pan. Bake for 30 minutes or until chicken is fully cooked and is 165°F internal temperature.

Let stand 5 minutes. Serve and enjoy.
