Ingredients

  • Cooking spray

  • 1-2 shallots, minced

  • 2lbs ground turkey

  • 1/2-3/4 cup finely chopped baby bella mushrooms

  • 1 cup Italian seasoned breadcrumbs

  • 1/3 cup ketchup

  • 2 large eggs

  • 1.5 teaspoon salt

  • 1 teaspoon pepper

  • 1 tablespoon Italian seasoning

  • 6 cloves of garlic

  • 1.5 cups shredded cheddar cheese or mozzarella if you prefer

  • 2 oz or more chopped fresh baby spinach

    Topping

  • 2 tablespoons ketchup

  • 3 tablespoons BBQ sauce

  • 2 teaspoons brown sugar

  • 2 teaspoons dijon mustard

  • 2 teaspoons Worcestershire sauce

Preheat your oven to 350°F. Spray a 9x13 baking dish with cooking spray.

In a small pan add a little olive oil to a pan over medium high heat and saute the shallots until they’re golden, about 3-4 minutes. Remove from heat, set aside and allow the shallots to cool.

In a large bowl add the ground turkey meat, chopped mushrooms, (cooled) shallots, breadcrumbs, ketchup, eggs, garlic, salt, pepper and Italian seasoning. Mix the mixture with your hands until they’re well combined.

Cut a large piece of parchment paper. You’re going to spread and flatten the meat to about a 10x12 rectangle. So have enough parchment on each side so that you can grab and hold the parchment paper. Flatten the meat mixture into that 10x12 inch rectangle. Sprinkle the cheese mixture evenly over the meat rectangle, sprinkle the fresh chopped spinach over the cheese.

Starting on the short end of the meat, start rolling it into a roll, lift and remove the parchment paper as you roll and connect the meat mixture, keep going till the meat is fully rolled. Pinch the meat together to connect the ends to try and keep the cheese mixture inside the meat as best as you can while it cooks.

Add the roll seam side down on the sprayed 12x13 inch pan. Bake the meat loaf for 45 minutes.

While its cooking in a bowl add topping ingredients and blend well. Remove meat loaf from pan and top with the topping mixture, spreading evenly over the meat. Bake for another 20-30 minutes till the topping bubbles and turkey is cooked through with an internal temperature of 165°F.

Remove from oven and allow to stand and cool for 15 minutes. Slice into even slices. Serve with a vegetable of your choice.
