Apple Cider Braised Pork Chops & Potatoes

Ingredients

  • 1 large onion, sliced whole and thin

  • 3-4 Yukon gold potatoes

  • 2-3 cups apple cider, until all potatoes are covered

  • salt & pepper to taste

  • 2 pork chops, bone in & thick

  • 2 tablespoons fresh parsley, chopped

  • fresh sprigs of rosemary

Preset oven to 400°F

In a large dutch oven cast iron with a lid, arrange 1/3 of the sliced onions on the bottom of the pan, season with salt and pepper. Add a layer of potatoes and season, keep layering potatoes and onions, ending in onions.

Add apple cider to almost the top of the potatoes. Season pork chops with salt & pepper, and top the potatoes with them. Sprinkle the parsley on top and add the fresh rosemary.

Add the lid to the dutch oven, bake for 45-60 minutes. If pork is done and the potatoes need more time, remove pork and bake the potatoes a bit more.

Sprinkle with additional fresh parsley and serve hot.
