French Onion Potroast, in slow cooker

In a bowl, whisk together tomato sauce, beef broth, minced garlic, thyme, Worcestershire sauce and white wine vinegar.

Salt and pepper both sides of the roast.

Slice the red onions,place half the onions in the slow cooker, pour half the sauce over the onions. Place roast on top of the onions and sauce, sprinkle the rest of the onions on top of the roast, pour remaining sauce on top.

Cover and cook on low for 7 hours, or high for 4 hours.

Remove the roasts from the slow cooker, now you’ll make the gravy. use 1 tablespoon of cornstarch or flour per 1 cup of sauce from the slow cooker. Heat over low heat stirring frequently until sauce thickens.

While the sauce is thickening, slice/shred the beef. Add beef back to slow cooker.

Serve over buttery homemade mashed potatoes, as i had done. Or serve over rice, noodles or pasta.

  • 2 lbs Chuck roast

  • 2 cups red onion, thinly sliced

  • 3 garlic cloves, minced

  • 1 tablespoon white wine vinegar

  • 1 tablespoon Worcestershire sauce

  • 1/4 cup tomato sauce

  • 1 cup beef broth

  • 1 teaspoon salt

  • 1 teaspoon black pepper

  • 1/4 teaspoon thyme

  • 2 teaspoons parsley

  • 2 tablespoons cornstarch/flour
