Parmesean Crusted Lemon Chicken

Ingredients

  • 1 lb chicken breasts

  • 1 tablespoon olive oil

  • 2 large eggs

  • 4 cloves or garlic, minced

  • 1 teaspoon Italian seasoning

  • 1 teaspoon salt

  • 1 teaspoon black pepper

  • 1 cup shredded parmesean cheese

  • 3 tablespoons all-purpose flour

  • 8 tablespoons unsalted butter

  • 4 cloves of garlic

  • 1/2 cup lemon juice

  • 1/4 cup chicken broth

  • 1 teaspoon black pepper

Cut the chicken breast into slices and pound them out flat. (This is easier when the meat is room temp.)

In a bowl whisk eggs, garlic, italian seasoning, salt and ground pepper. In another bowl mis parmesean cheese and flour. Dip the chicken in the egg mixture then the breading. Set Aside.

In a large skillet add some olive oil. Cook chicken until crispy and the internal temp reaches 165 degrees.

In a small sauce pan heat the remainder sauce ingredients and cook for about 5 ninutes. pour some over chicken and serve the rest on the side. Garnish chicken with fresh parsley for extra color.

Use lemon butter sauce to pour over vegetables or a potato.
