Pineapple Chicken
Preheat oven to 400°F. Coat a baking dish with cooking spray and set aside.
Chop chicken into bite sized pieces and place in a bowl. Cover with BBQ (2/3 of the) sauce and mix. Set aside and let marinate for a minimum 15 minutes.
Chop jalapeno into small pieces after removing seeds. Slice and dice the onion , cut the bell peppers into bite sized pieces, add peppers and onions to the chicken. Feel free to add a bit more BBQ sauce if you feel everything isn’t coated enough.
Add the chicken, pepper and onions to the dish, top with the pineapples, no juice. Brush remaining BBQ sauce on top, season with salt and pepper. Mix together.
Bake uncovered for 35 minutes, or until internal temperature reaches 165°F. Serve over my perfect white rice or couscous.

2lbs boneless skinless chicken breast or boneless thighs
1 cup bbq sauce of your choice, separated
1 onion large, sliced
2 bell peppers, red or green cut into chunks
12oz pineapple chunks, fresh
1 jalapeno seeded and diced
1/2 teaspoon salt
1/2 teaspoon black pepper
