Thai Meatball Lettuce Wraps

Preheat the oven to 400°F. For the meatballs, mix all the ingredients except the sweet chili sauce in a medium bowl with your hands until the mixture is combined.

Lightly grease a baking with vegetable oil. Make large meatballs using a scoop or a spoon and form them into balls and then place them on the baking sheet.

Bake the meatballs for 15 minutes or until they are fully cooked through in the middle. flipping once halfway.

While the meatballs are cooking, start the coleslaw. In a medium bowl, combine all your coleslaw ingredients.

To make your dressing, whisk together rice vinegar, mayonnaise and sweet chili sauce, mix and pour over the coleslaw, tossing to coat. Set aside till meatballs are ready.

When the meatballs are done, transfer them to a bowl and toss with 2-3 tablespoons of sweet chili sauce.

Place coleslaw on top of a lettuce piece, place 2-3 meatballs on top, top with fresh lime juice and an optional choice of cilantro on top.

Ingredients

Meatballs

  • 1.5 - 2 lbs of Turkey meat (as i used) or pork (pork is usually used)

  • 5 scallions, thinly sliced

  • 1 tablespoon ginger, finely minced

  • 2 teaspoons fish sauce

  • 1/2 teaspoon sriracha

  • 1 teaspoon salt

  • 2 tablespoons lime juice, 1-2 limes

  • 2-3 tablespoons sweet chili sauce,for coating the meatballs

    Coleslaw

  • 1 14oz bag of coleslaw mix

  • 10 basil leaves, rolled up and sliced

  • 5 mint leaves, rolled up and sliced

  • 3 tablespoons cilantro, chopped

  • 1 scallion, finely sliced

  • 1/4 cup rice vinegar

  • 5 teaspoons light mayo

  • 4 teaspoons sweet chili sauce

  • 1 head of iceberg lettuce

  • extra lime for garnish and adding juice on top of the meatballs
