Ingredients

  • 2 tablespoons olive oil

  • 1 large yellow onion, diced

  • 8 cloves of garlic, minced

  • 2 tablespoons chili powder

  • 2 teaspoons smoked paprika

  • 1 tablespoons cumin

  • 1/8 teaspoon cayenne pepper

  • 1lb ground turkey

  • 14.5oz fire roasted garlic diced tomatoes

  • 2 cans Great Northern beans, drained and rinsed

  • 3 cups chicken broth

  • 2 limes

  • 1/4 cup cilantro, chopped

Over a large dutch oven pot, heat olive oil, over medium heat. Add the onions and cook for 5 minutes. Add the garlic, cumin, salt, pepper, chili powder, paprika and cayenne, saute for 30 seconds.

Add the ground turkey and 1/4 cup of the chicken broth, and stir and cook the turkey meat. Break up the meat as it cooks with a wooden spoon. Stir occasionally and break down the meat, till its cooked and no longer pink.

While the turkey is cooking, take 1 cup of the rinsed beans, and mash them up with a fork. After the meat is cooked, add the mashed beans to the meat, mix and cook for 30 seconds. Add the whole beans, tomatoes and the rest of the chicken broth, stir till well combined. Bring mixture to a boil, reduce heat to medium lo and simmer for 30-45 minutes, until thickened.

Remove from heat, add fresh lime juice, cilantro. Serve hot.
