Ingredients

  • 1lb white sweet potatoes

  • 2 tablespoons salted butter

  • salt & pepper to taste

  • 2-4 tablespoons milk

  • red pepper flakes to taste or 1 chile pepper, minced

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1/4 cup sliced green onions, white and green parts

Peel and then cut the sweet potatoes into large pieces. Add the potatoes into a pot, cover the potatoes with water and then boil over high heat.

When the pot begins to boil, salt the water. When potatoes have cooked to where a butter knife inserts easily, about 20 minutes.

Drain the sweet potatoes. Place them back into the pot along with the butter and milk. Mash the potatoes until they are smooth. Season with salt, pepper, garlic powder and onion powder. Mix well.

Fold in the green onions, serve immediately.
