Ingredients

  • 4 large Chicken breasts

  • 2 tablespoons olive oil

  • 2 teaspoons smoked paprika

  • 1 teaspoon salt

  • 1 teaspoon pepper

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 4oz cream cheese, room temperature

  • 1/2 cup grated Parmesan cheese

  • 3 tablespoons mayonnaise

  • 2 cups fresh chopped spinach

  • 1 teaspoon fresh garlic, minced

  • 1/2 teaspoon red pepper flakes

Preheat oven to 375°F

Sliced chicken breast in half length-wise. In a small bowl mix paprika, garlic powder, onion powder salt & pepper together.

Smother outside and inside of the chicken breast in olive oil. After you cover them in olive oil, sprinkle the spice mixture on the outside of each end of the chicken and also inside the chicken that you sliced. Set chicken aside.

In a large bowl, add the softened cream cheese, mayonnaise, Parmesan cheese, fresh garlic, and red pepper flakes. Whip together using a fork. Chop the fresh spinach and add to the whipped mixture. Mix the spinach in with the cream cheese mixture.

Open each chicken breast and spoon each breast with the spinach mixture evenly till you have no more filling left. Place chicken in a baking dish and place in heated oven.

Chicken will be cooked and ready in about 30 minutes, or until chicken is ready. Chicken is ready when it reaches 165°F internal temperature.

Serve chicken with any side you like. Potato, fresh vegetables or even just a simple salad.
