Ingredients

  • 13oz smoked Italian Sausage, Chicken or Turkey

  • 2 large carrots

  • 1 Zucchini

  • 2 red peppers

  • 1 large head of broccoli

  • 2 red potatoes

  • 1/2 tablespoon dried basil

  • 1/2 tablespoon dried oregano

  • 1/2 tablespoon dried parsley

  • 1/2 tablespoon garlic powder

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon dried thyme

  • 1/8 teaspoon red pepper flakes

  • 1-2 teaspoons sea salt

  • 2 teaspoons fresh black pepper

  • 1/3 cup grated Parmesan cheese

  • 5 tablespoons olive oil

Preheat oven to 400°F

In a bowl mix the seasonings together: basil, oregano, parsley, garlic powder, onion powder, dried thyme, red pepper flakes, salt, pepper and Parmesan cheese.

Line a baking pan with aluminum foil and lightly coat pan with a littler olive oil or cooking spray.

Cut the red potatoes into bite size pieces, cut in half then the half into half then slice each half to make small cubes. Slice each carrot in half lengthwise, then chop into small pieces. Add both the sliced potatoes and carrots to the the pan. Lightly coat in olive oil, and a few sprinkles of the seasoning. Place in the heated oven for 20 minutes.

While the potatoes and carrots are cooking slice the zucchini in half lengthwise and slice each half. Chop Broccoli into florets. Slice the red peppers in half lengthwise and remove the seeds, cut them into pieces. Chop the sausage into 1” Pieces.

After the potatoes and carrots have roasted for 20 minutes, remove the pan. Add the zucchini, broccoli, red peppers and sausage to the pan. Cover everything in olive oil and sprinkle the seasoning over the vegetables. Mix well and let everything get coated. Arrange vegetables so that none of them overlap to the best of your ability.

Put the pan in the oven and roast for 15 minutes, remove pan from oven and toss the vegetables and sausage. Return to the oven for another 10-20 minutes, till vegetables are cooked to your liking.

Feel free to toss a little more Parmesan cheese on top after and sprinkle a little fresh parsley.
