Mojo Pork in Slow Cooker

Ingredients

  • 1 (4-pounds) pork butt (bone-in or boneless)

  • 1 1/2 teaspoons salt

  • 1 teaspoon ground black pepper

  • 3 oranges, freshly squeezed

  • 2 limes, freshly squeezed

  • Zest of 1 orange

  • Zest of 1 lime

  • 1/2 cup olive oil

  • 8 cloves garlic, chopped finely

  • 2 teaspoons dried oregano

  • 2 teaspoons ground cumin

  • 1/4 cup chopped cilantro

Add chopped cilantro, garlic, orange zest, lime zest, orange juice, lime juice, salt, pepper, cumin, oregano and olive oil in a slow cooker. Mix together well.

Add pork to the slow cooker, take some mixture and cover the pork.

Cook on low for 8 hours. Allow to rest in slow cooker. Shred.

I served them with Tostadas, in tacos or even inside enchiladas.
