Tostadas
Ingredients
Corn tortillas
Vegetable oil
Sea salt
Re-fried beans
Shredded Cheddar cheese
Shredded lettuce
Cojito cheese, crumbled
Avocado, sliced (optional)
Mojo pork or shredded meat of your choice (optional)
Preheat oven to 400°F Line baking tray with aluminum foil. Coat both sides of tortillas with vegetable oil, place tortillas on the tray, make sure they’re not overlapping. Sprinkle with sea salt, bake for 4 minutes, flip, and bake for another 4 minutes.
Reheat re fried beans to instructions. Shred cheddar cheese, thin shred lettuce and crumble cojito.
Smear a little bean on the tortilla, top with cheddar cheese, lettuce and cojito. If adding meat go ahead and add that on top, or the avocado if you’re using it. Other than the beans beans first and a little cheddar on top of that, you can layer then as you like.
