Turkey Sausage & Potato Skillet
As I always do, I prep all my items. Chop onions, slice peppers and cut the potatoes.
In a large cast iron skillet heat 3 tablespoons oil over medium heat. Add the baby potatoes to the pan ans season with salt and pepper. Saute until golden and cooked through, around 10-12 minutes, stirring constantly. (To speed up the cooking process of the potatoes you can use steam bagged potatoes and steam them or boil potatoes first, to speed up the cooking process.) When cooked transfer potatoes to a plate and set aside.
In the same skillet with the remaining tablespoon oil, brown the sliced smoked sausage on all sides for about 5 minutes. Add the onion, red bell pepper and season with red pepper flakes, Italian seasoning, salt & pepper. Cook the mixture for another few minutes until softened. Add garlic and continue cooking.
Scrape the pan with chicken stock, stir in the hot sauce and stir to coat the sausage and vegetables.
Add the cooked potatoes back to the skillet and mix everything together to reheat the potatoes.Garnish with fresh parsley and parmesean. Serve immediately.

1.5 lbs small baby potatoes, quartered
1 onion, minced
1 red pepper, sliced
1 package smoked sausage
4 tablespoons olive oil
2 teaspoons Italian seasoning
1/2 teaspoon red chili pepper flakes
8 cloves garlic,minced
1/4 cup low sodium chicken broth
1 teaspoon hot sauce
salt and pepper
fresh parsley, chopped
grated Parmesan
